Nut-Coated Salmon and Asparagus Done Green Beanie Style

The Green Beanie's recipes keep healthy living in mind, with a touch of humor.

Cupertino’s own snowboard-loving teen cooking vlogger The Green Beanie cooks nut-crusted salmon with asparagus in this week’s episode.

“You can use any kind of nut. I used almonds. You can also use pistachios, I like pistachios, they are random, like pineapples and giraffes. Like for the random pineapple!” says The Green Beanie.

Editor’s note: We’re going out of order in The Green Beanie series because we’re headed into summer and her videos started running originally in the fall and included dishes like pumpkin soup. You can still watch the pumpkin soup episode on YouTube, and we’ll bring it back closer to the time when pumpkins are harvested.

She's entertaining, isn't she! And it cracks me up that this snowboarding kid loves to cook, and focuses on healthy eating. I don't know many teens who have that combo.
